New Recipe and Lesson 2 - Making Things Last

I have had to learn to make things last the last few years. How can I make a pound of beef feed us for 3 days??? So, I have had to be very creative with my cooking. Today, I had to figure out how to make a bag of frozen chicken breasts last until Friday. So, cooking them and adding two sides wasnt an option. My mom had this entree the other day and I thought, thats a good place to start! Here is my tweaked recipe.

I wanted to begin by telling you how much this meal cost. And I hate those misleading sites that say, "here is a meal for $5!" But you already have to have 5 of the 7 ingrediants in your pantry. Now, I didn't use all of the potatoes, chicken, and rice, so overall, it cost less than the amounts I am showing you...



Bag of chicken breasts, 6 breasts a bag - $5.49
5 pound bag of potatoes - $2.12
Cream of chicken soup - 69 cents
Can of mixed veggies - 50 cents
Box of brown rice - 89 cents
box of stuffing - 89 cents

$10.98, I think?

Ok, so this is pretty simple...

1. Boil one large chicken breast.

2. Peel and cut two potatoes into bite site pieces, boil the pieces to tender. Drain and set aside.

3. Make stuffing as directed in the package. Make one cup of rice as directed on package. Set aside stuffing, as well as the rice. Set aside.

4. When the chicken is cooked thoroughly, shred the chicken to small pieces.

5. Take rice, potatoes, rice, chicken, unheated veggies and unheated soup and mix together in large bowl. Pour mixture in a cooking dish.



6. Top dish with stuffing. Put dish in 400 degree oven on top rack for 10 minutes or until stuffing begins to brown.



Serve! This dish fed a hungry husband, wife and two kids with some leftover!

Guess Who Has A New Potty???

This girl!! Jason and I took Avery to Target tonight to find a potty chair. We didn't know what kind to get. When we got there, she loved the Sesame Street one. It's the kind that sits on the toilet, not an actual chair. I've heard both reasonings on a chair and a pad for the real toilet. On one hand, the chairs are little and easier for them to sit on and they aren't scary to flush. On the other, the pad doesn't require you to have to clean out a chair and they teach kids to sit on the big potty from the get go. What it really came down to was that we just don't have a big bathroom at all, so keeping an actual chair in the bathroom would have been hard. So we got the pad. Some Changes...

We've been going through a bit of a transition at the Whitehead household the last month or so. I haven't really talked too much about it because I wasn't ready, to be honest. It's just a lot of change and I've been trying to figure it out in my head.   As of three weeks ago last Friday, I am no longer a full time work out of home employee.   I can't believe I just said that.   It's been the plan for several months now for me to go into real estate and it was always assumed I'd be doing that part time, while keeping my full time job. Plans kind of changed when Jason got his promotion. He'd always has a job that allowed him a lot of flexibility.
